It\u2019s quite high in sugar per serving, so be mindful of how much you have!<\/p>\n<p class=\"mb-md section-heading-1\"><strong>Ingredients<\/strong><\/p>\n<section>\n<ul class=\"list\">\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">230ml vegetable oil, plus extra for the tin<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g natural yogurt<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">4 large eggs<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1\u00bd tsp vanilla extract<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">\u00bd orange, zested<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">265g self-raising flour<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">335g light muscovado sugar<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2\u00bd tsp ground cinnamon<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">\u00bc fresh nutmeg, finely grated<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">265g carrots (about 3), grated<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g sultanas or raisins<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g walnuts or pecans, roughly chopped (optional)<\/li>\n<\/ul>\n<\/section>\n<section>\n<p class=\"mb-sm mt-sm heading-5\"><strong>For the icing<\/strong><\/p>\n<ul class=\"list\">\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g slightly salted butter, softened<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">300g icing sugar<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g soft cheese<\/li>\n<\/ul>\n<div id=\"attachment_13318\" style=\"width: 310px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-13318\" class=\"size-medium wp-image-13318\" src=\"http:\/\/www.fiveminutesspare.com\/football\/wp-content\/uploads\/sites\/18\/2020\/09\/0920F218-FEFB-4CD0-8D47-E41D67A7B4ED-300x273.jpeg\" alt=\"\" width=\"300\" height=\"273\" \/><p id=\"caption-attachment-13318\" class=\"wp-caption-text\">Example.<\/p><\/div>\n<p><strong>Method<\/strong><\/p>\n<ul class=\"grouped-list__list list\">\n<li class=\"pb-xs pt-xs list-item\">Heat the oven to 180C\/160C fan\/gas 4. Oil and line the base and sides\u00a0of two\u00a020cm cake tins with baking parchment. Whisk the oil, yogurt, eggs, vanilla\u00a0and zest in a jug. Mix the flour, sugar, cinnamon and nutmeg with a good pinch of salt in a bowl. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times to bring the lumps to the surface.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Add the wet ingredients to the dry, along with the carrots, raisins and half the nuts, if using. Mix well to combine, then divide between the tins.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Bake for 25-30 mins or until a skewer inserted into the centre of the cake comes out clean. If any wet mixture clings to the skewer, return to the oven for 5 mins, then check again. Leave to cool in the tins.<\/li>\n<li class=\"pb-xs pt-xs list-item\">To make the icing, beat the butter and sugar together until smooth. Add half the soft cheese and beat again, then add the rest (adding it bit by bit prevents the icing from splitting). Remove the cakes from the tins and sandwich together with half the icing.
