The equally popular minced beef burrito alternative, and, if you&#8217;ve ever eaten at Taco Bell, the one thats gentler on your stomach the next day!<\/strong><\/p>\n<p>You can chuck in some left over chicken, making this a cheap, easy and practical recipe &#8211; suitable for any cooking ability. This recipe can serve multiple people, and is quite big on calories!<\/p>\n<p class=\"mb-md section-heading-1\"><strong>Ingredients<\/strong><\/p>\n<section>\n<ul class=\"list\">\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 tbsp vegetable oil<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 red or white onion, or 4 spring onions, chopped<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">400g mixed vegetables of your choice<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">200g\u00a0chicken, chopped into small chunks or shredded<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 x 250g packs ready-cooked lime &amp; coriander rice<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">400g can red kidney beans in chilli sauce<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">6 large wraps<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 avocado, chopped<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g grated cheddar<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 egg, beaten<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">soured cream, to serve (optional)<\/li>\n<\/ul>\n<div id=\"attachment_1290\" style=\"width: 310px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1290\" class=\"size-medium wp-image-1290\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/09\/raid-the-fridge-burritos-7c42dec-300x273.jpg\" alt=\"\" width=\"300\" height=\"273\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/09\/raid-the-fridge-burritos-7c42dec-300x273.jpg 300w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/09\/raid-the-fridge-burritos-7c42dec.jpg 440w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-1290\" class=\"wp-caption-text\">Example image.<\/p><\/div>\n<p><strong>Method<\/strong><\/p>\n<ul class=\"grouped-list__list list\">\n<li class=\"pb-xs pt-xs list-item\">Heat the oil in a large pan. Add the onion and cook for 5 mins until soft, then add your vegetables and continue cooking for another 5-10 mins or until tender. Add the leftover meat, the rice and beans, along with the sauce from the can. Stir everything together and cook for 5 mins until piping hot.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Heat another frying pan, or a griddle pan, until hot, and heat oven to 140C\/120C fan\/gas 2. Now assemble the burritos. Warm a wrap for 10 secs on the hot pan (keep the pan hot, you\u2019ll need to use it again).<\/li>\n<li class=\"pb-xs pt-xs list-item\">Pile roughly a sixth of the rice mixture onto the centre of the wrap. Top with a little avocado and some cheese (if you want), then brush beaten egg around the edge. Fold the ends over the filling, then fold in the sides, like an envelope.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Flatten a little to a parcel, then place, seam-side down, in the hot pan. Cook for 2 mins until the underside has sealed shut and is toasted a golden brown, flip over and cook for a few mins more.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Keep the burrito warm in the oven while you continue assembling and cooking the remaining burritos.
