That\u2019s why I\u2019ve got a vegan ramen recipe for you today. Read more about it below.<\/p>\n<p class=\"mb-md section-heading-1\"><strong>Ingredients<\/strong><\/p>\n<section>\n<ul class=\"list\">\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 garlic cloves<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">thumb-sized piece ginger, sliced, plus a few slices cut into fine matchsticks to serve (optional)<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1\u00bd tbsp white miso paste<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 tbsp neri goma (white sesame paste) or tahini<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">15g dried shiitake mushrooms<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1l good-quality vegan stock<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 tbsp soy sauce<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">200g firm tofu, cut into chunky cubes<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 tbsp cornflour<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 tbsp veg or sunflower oil<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">100g (2 x nests) ramen or rice noodles<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 head pak choi, quartered<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 spring onions, finely sliced, white and green parts kept separate<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">25g ready-to-eat beansprouts<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 carrot, peeled and cut into fine matchsticks<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">sesame oil, sriracha, chopped coriander, crushed peanuts, crumbled sheets of nori or dried chilli threads (silgochu), to serve (optional)<\/li>\n<\/ul>\n<div id=\"attachment_196061\" style=\"width: 310px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-196061\" class=\"size-medium wp-image-196061\" src=\"http:\/\/www.fiveminutesspare.com\/news\/wp-content\/uploads\/sites\/2\/2020\/08\/7AA5612B-257A-4BB8-B01A-0971B988382E-300x273.jpeg\" alt=\"\" width=\"300\" height=\"273\" \/><p id=\"caption-attachment-196061\" class=\"wp-caption-text\">Example.<\/p><\/div>\n<p class=\"mb-xs section-heading-1\"><strong>Method<\/strong><\/p>\n<div class=\"grouped-list\">\n<ul class=\"grouped-list__list list\">\n<li class=\"pb-xs pt-xs list-item\">Crush the garlic with the back of a big knife, then put it in a saucepan with the ginger, miso, neri goma, mushrooms, stock and soy. Bring to a gentle simmer, cover and bubble for 5 mins until the ginger is soft. Strain into a clean pan and discard everything left in the strainer.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Meanwhile, cook the tofu. Toss it in the cornflour and heat the oil in a frying pan. Fry for a few mins on each side, being careful as you turn it that it doesn\u2019t fall apart. Cook the noodles for 1 min less than pack instructions, so they retain a little bite. Drain and leave in the pan with a little cooking water so they don\u2019t stick together.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Add the pak\u00a0choi and whites of the spring onions to the broth and gently reheat for 1-2 mins\u00a0until the greens have just wilted.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Divide the noodles between two deep bowls, ladle over the broth and veg.
