They also provide moderate amounts of zinc, thiamin, vitamin B6, and magnesium.<\/li>\n<li>There are more than 12 million tonnes of chickpeas produced annually across the world. India produces around 70% of the overall total.<\/li>\n<li>Chickpeas, amongst others, are also known as ceci beans, Indian peas, bengal grams, chana, kadale kaalu, sanaga pappu, and shimbra. In Spain, they are known as &#8216;garbanzos&#8217;.<\/li>\n<li>Chickpeas are the main ingredient in the North African\/Middle Eastern dish of hummus and commonly found in the Indian dish of daal.<\/li>\n<\/ul>\n<h4>Chorizo<\/h4>\n<ul>\n<li>The first known written reference to chorizo as a Spanish sausage was in 1726.<\/li>\n<li>Chorizo is a fermented, cured, smoked pork sausage, that can be sliced and eaten without cooking.<\/li>\n<li>Chorizo is often added as an ingredient to flavour many other Spanish dishes.<\/li>\n<li>Chorizo gets its distinctive smoky flavour and deep red colour from the ground spice, paprika (piment\u00f3n).<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>Spanish Chickpea and Chorizo Stew<\/h3>\n<p>This dish is definitely not one for those looking<\/p>\n<p>Here&#8217;s a easy to follow recipe for the hearty dish of &#8221;Spanish chickpea and chorizo stew&#8221; or to give it its Spanish name, &#8221;Cazuela de garbanzo y chorizo&#8221;<\/p>\n<h1 class=\"elementor-heading-title elementor-size-medium\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1185\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_1334845190-1-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_1334845190-1-300x200.jpg 300w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_1334845190-1-272x182.jpg 272w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_1334845190-1.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/h1>\n<h4>Ingredients<\/h4>\n<p>3 tbsp (45 ml) olive oil<br \/>\n2 bay leaves<br \/>\n1 large onion, finely chopped<br \/>\n1 lb (450 g) uncooked chorizo sausages<br \/>\n1 lb (450 g) tomatoes, roughly chopped<br \/>\n6 garlic cloves, finely chopped<br \/>\n\u00be pint (450 ml) water<br \/>\n4 tbsp (60 ml) parsley, freshly chopped<br \/>\n12 oz (350 g) new potatoes, washed and quartered<br \/>\nPinch of dried chilli flakes<br \/>\nPinch of paprika<br \/>\n8 oz (225 g) dried chickpeas<br \/>\nSalt and ground black pepper, to taste<\/p>\n<h4>Garnish<\/h4>\n<p>A drizzle of extra-virgin olive oil<br \/>\nPinch of fresh parsley<\/p>\n<p><em>Tip: It&#8217;s obviously possible to use tinned chickpeas and cooked chorizo sausages but the alternative as listed will give the best results.<\/em><\/p>\n<h4>Method<\/h4>\n<p>Step 1 \u2013 Put the chickpeas into a large bowl, cover and leave to soak overnight.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1187\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_555007747-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_555007747-300x200.jpg 300w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_555007747-272x182.jpg 272w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/07\/shutterstock_555007747.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Step 2 \u2013 The next day, drain the chickpeas and place in a large pan with a good measure of water. Cover and bring to boil, then simmer for 2 -3 hours until tender. Remove scum as it forms and add more water, if necessary. Add the chorizo sausage and fry on medium heat for about 5 minutes, until slightly brown. Stir in the paprika, chopped tomatoes, onion, chickpeas, potatoes, sausages and bay leaves.<\/p>\n<p>Step 5 &#8211; Pour in about 3\/4 pint (450 ml) of the chickpea stock and the water, adding the salt and pepper to taste.<\/p>\n<p>Step 6 &#8211; Bring to boil, then reduce the heat and simmer for 45 &#8211; 50 minutes, stirring gently until potatoes are tender and the stew has thickened.<\/p>\n<p>Step 7 &#8211; Add the chopped parsley, then ladle the stew into 4 large warmed bowls.
