Check out this spicy vegetable fajita recipe, it\u2019s easy enough to make and very tasty!\u00a0<\/strong><\/p>\n<p class=\"responsive-tabs__pane-title\"><strong>Ingredients<\/strong><\/p>\n<div class=\"ingredients-list\">\n<div class=\"ingredients-list__content\">\n<ul class=\"ingredients-list__group\">\n<li class=\"ingredients-list__item\">8 pancakes or wraps\/fajita wraps<\/li>\n<li class=\"ingredients-list__item\">2 tbsp olive oil\n<div id=\"gf-tooltip-0\" class=\"gf-tooltip\" role=\"tooltip\" aria-hidden=\"true\"><\/div>\n<\/li>\n<li class=\"ingredients-list__item\">1 onion, chopped<\/li>\n<li class=\"ingredients-list__item\">1 small cauliflower, cut into small florets<\/li>\n<li class=\"ingredients-list__item\">410g can chickpeas, drained and rinsed<\/li>\n<li class=\"ingredients-list__item\">400g jar arrabbiata tomato sauce<\/li>\n<li class=\"ingredients-list__item\">3 tbsp chopped fresh coriander<\/li>\n<li class=\"ingredients-list__item\">150g tub low-fat natural yogurt<\/li>\n<li class=\"ingredients-list__item\">50g baby spinach leaves<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1086\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/06\/891AD475-AF01-4104-864B-A5FD8FA2490E-300x272.jpeg\" alt=\"\" width=\"300\" height=\"272\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/06\/891AD475-AF01-4104-864B-A5FD8FA2490E-300x272.jpeg 300w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/06\/891AD475-AF01-4104-864B-A5FD8FA2490E.jpeg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Method<\/strong><\/p>\n<ol class=\"method__list\">\n<li class=\"method__item\">Heat the oven to 180C\/160C fan\/gas 4. Put the wraps or pancakes of your choice in an oven or microwave to heat them.<\/li>\n<li class=\"method__item\">Heat the oil in a saucepan, add the onion and fry for 5 mins until softened. Tip in the cauliflower florets and fry briefly until they take on a little colour. Splash in 5 tbsp water, cover the pan and cook for 5 mins until the cauliflower is just tender.<\/li>\n<li class=\"method__item\">Stir the chickpeas into the pan with the arrabbiata sauce and bring to the boil. Simmer for 2-3 mins, then stir in the coriander and remove from the heat.<\/li>\n<li class=\"method__item\">Transfer the sauce to a serving bowl and put on the table with the warm pancakes, yogurt and spinach leaves. Let everyone put a few spinach leaves in the centre of each pancake, spoon the filling over and top with a little yogurt.
