{"id":1018,"date":"2020-02-27T16:38:26","date_gmt":"2020-02-27T16:38:26","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=1018"},"modified":"2020-02-27T16:38:26","modified_gmt":"2020-02-27T16:38:26","slug":"home-made-chicken-noodle-soup-recipe","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/home-made-chicken-noodle-soup-recipe\/uncategorized\/","title":{"rendered":"Home-Made Chicken Noodle Soup Recipe"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n900ml chicken<br \/>\nor vegetable stock (or Miso soup mix)<br \/>\n1 boneless, skinless chicken breast, about 175g\/6oz<br \/>\n1 tsp chopped fresh root ginger<br \/>\n1 garlic clove, finely chopped<br \/>\n50g rice<br \/>\nor wheat noodles<br \/>\n2 tbsp sweetcorn, canned or frozen<br \/>\n2-3 mushrooms, thinly sliced<br \/>\n2 spring onions, shredded<br \/>\n2 tsp soy sauce, plus extra for serving<br \/>\nmint<br \/>\nor basil leaves and a little shredded chilli (optional), to serve<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.bbcgoodfood.com\/sites\/default\/files\/styles\/recipe\/public\/recipe\/recipe-image\/2019\/05\/recipe-image-legacy-id-1035613_10.jpg?itok=ebIUvW6b\" alt=\"Chicken noodle soup in bowls with spoons\" \/><\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Pour 900ml chicken or vegetable stock into a pan and add 1 boneless, skinless chicken breast, 1 tsp chopped root ginger and 1 finely chopped garlic clove.<\/p>\n<p>Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender.<\/p>\n<p>Remove the chicken to a board and shred into bite-size pieces using a couple of forks.<\/p>\n<p>Return the chicken to the stock with 50g rice or wheat noodles, 2 tbsp sweetcorn, 2-3 thinly sliced mushrooms, 1 shredded spring onion and 2 tsp soy sauce.<\/p>\n<p>Simmer for 3-4 mins until the noodles are tender.<\/p>\n<p>Ladle into two bowls and scatter over the remaining shredded spring onion, mint or basil leaves and shredded chilli if using.
