{"id":1002,"date":"2020-02-03T16:23:07","date_gmt":"2020-02-03T16:23:07","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=1002"},"modified":"2020-02-03T15:36:45","modified_gmt":"2020-02-03T15:36:45","slug":"classic-spaghetti-bolognese-recipe","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/classic-spaghetti-bolognese-recipe\/uncategorized\/","title":{"rendered":"Classic Spaghetti Bolognese Recipe"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n1 tbsp olive oil<br \/>\n4 rashers smoked streaky bacon, finely chopped<br \/>\n2 medium onions, finely chopped<br \/>\n2 carrots, trimmed and finely chopped<br \/>\n2 celery sticks, finely chopped<br \/>\n2 garlic cloves, finely chopped<br \/>\n2-3 sprigs rosemary, leaves picked and finely chopped<br \/>\n500g beef mince<br \/>\n<strong>For the bolognese sauce<\/strong><br \/>\n2 x 400g tins plum tomatoes<br \/>\nsmall pack basil, leaves picked, \u00be finely chopped and the rest left whole for garnish<br \/>\n1 tsp dried oregano<br \/>\n2 fresh bay leaves<br \/>\n2 tbsp tomato pur\u00e9e<br \/>\n1 beef stock cube<br \/>\n1 red chilli, deseeded and finely chopped (optional)<br \/>\n125ml red wine<br \/>\n6 cherry tomatoes, sliced in half<br \/>\nTo season and serve<br \/>\n75g parmesan, grated, plus extra to serve<br \/>\n400g spaghetti<br \/>\ncrusty bread, to serve (optional)<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.bbcgoodfood.com\/sites\/default\/files\/styles\/recipe\/public\/recipe_images\/the-best-spaghetti-bolognese.jpg?itok=PH6AqY-g\" alt=\"Two bowls of spaghetti topped with bolognese sauce and a pan of extra sauce on the side.\" \/><\/p>\n<p><strong>Method<\/strong><br \/>\nPut a large saucepan on a medium heat and add 1 tbsp olive oil.<\/p>\n<p>Add 4 finely chopped bacon rashers and fry for 10 mins until golden and crisp.<\/p>\n<p>Reduce the heat and add the 2 onions, 2 carrots, 2 celery sticks, 2 garlic cloves and the leaves from 2-3 sprigs rosemary, all finely chopped, then fry for 10 mins. Stir the veg often until it softens.<\/p>\n<p>Increase the heat to medium-high, add 500g beef mince and cook stirring for 3-4 mins until the meat is browned all over.<\/p>\n<p>Add 2 tins plum tomatoes, the finely chopped leaves from \u00be small pack basil, 1 tsp dried oregano, 2 bay leaves, 2 tbsp tomato pur\u00e9e, 1 beef stock cube, 1 deseeded and finely chopped red chilli (if using), 125ml red wine and 6 halved cherry tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes.<\/p>\n<p>Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce.<\/p>\n<p>Add the 75g grated parmesan, check the seasoning and stir.<\/p>\n<p>When the bolognese is nearly finished, cook 400g spaghetti following the pack instructions.<\/p>\n<p>Drain the spaghetti and stir into the bolognese sauce.
